Chocolate Orange Cake
Adapted from; “Orange Cake” Alan Corduner from Taste of My Life Serves 8
Cooking time over 2 hours

Ingredients;

  • 2 large oranges
  • tsp butter
  • 1 tsp plain flour
  • 6 eggs
  • 200g/9oz ground almonds/hazelnuts
  • 50g cocoa
  • 250g/9oz caster sugar
  • 1 tbsp baking powder

Method;
1. Wash the oranges thoroughly. Pop into a saucepan and bring to boil then simmer for about 2 hours or until soft.
2. Preheat the oven to 175 c and grease a 9in cake tin.
3. Leave the oranges to cool, before slicing in quarters and removing the pips.
4. Pulp the oranges in a food processor or blender.
5. Beat the eggs in a bowl and gradually stir in all the remaining ingredients, including the orange pulp. Pour into the cake tin and cook for about 2 hours, until the cake has risen.
6. Transfer to a wire cooling rack, keeping the cake in the tin. When the cake has cooled, ice with you chosen topping; I made chocolate orange butter icing.
Chocolate Orange Butter Icing;

  • 4 oz butter
  • 8 oz icing sugar
  • 2 tbsp of orange juice
  • 1 tbsp of cocoa (I must admit I added more to make it richer)

Soften butter then sieve icing over. Add other ingredients and cream together with a fork until creamy, whisking as mixture is combined.
