 Phew. I feel better now I have updated my posts.

 This recipe is a Delia Smith classic. I made an All-in-one Sponge and added coffee with a coffee buttercream icing. Carl took most of it to work for his workmates to eat with their….coffee.

Delia’s All in one Sponge

add 2 tsp of instant coffee to the flour and sift.

* Coffee Buttercream

  • 4 oz  softened butter
  • 8 oz icing sugar sifted
  • 2 tsp of instant coffee dissolved in 4 tbsp of boiling water. Allow to cool before adding to mixture.

Place the softened butter in a mixing bowl and sift the icing sugar over the top.

Add the coffee mixture and cream all the ingredients together with a wooden spoon until well  blended. Use as required
