Phew. I feel better now I have updated my posts.
This recipe is a Delia Smith classic. I made an All-in-one Sponge and added coffee with a coffee buttercream icing. Carl took most of it to work for his workmates to eat with their….coffee.
add 2 tsp of instant coffee to the flour and sift.
* Coffee Buttercream
-
4 oz softened butter
-
8 oz icing sugar sifted
-
2 tsp of instant coffee dissolved in 4 tbsp of boiling water. Allow to cool before adding to mixture.
Place the softened butter in a mixing bowl and sift the icing sugar over the top.
Add the coffee mixture and cream all the ingredients together with a wooden spoon until well blended. Use as required

Delia smiths recipes are really good. i’ve used i for years and its never failed me. In fact i started baking with her recipes.
I’m sure the coffee buttercream cake tasted gr8.

Lovely cake, both of us love coffee cake and lucky workmates. I must confess to always using a basic Victoria mix when I make a sponge, and just add the relevant flavouring. People always marvel at my sponges, so I must be doing something right. x
