Just lately I have become a bit yoghurt obsessed and keep trying to find recipes (baking recipes) including this fab ingredient. Although I usually use plain yoghurt I came across this super quick and easy recipe and just had to try it.
The recipe, as found here is below;
Yoghurt Cake
- 1 yoghurt (any flavour, I used strawberry)
- 1 yoghurt carton of cooking oil
- 2 yoghurt cartons of sugar
- 3 yoghurt cartons of self-raising flour
- 3 eggs
Add the yoghurt, oil, sugar and flour to a bowl and mix together
Beat the eggs and add them too, stirring the mixture until smooth
Pour into a greased 1lb loaf tin and bake on 165C/320F/Gas mark 4 for about 2 hours.
The cake was so moist and yummy (shame I don’t have a nice cut shot of it) you can really taste the fruity yoghurt. A great recipe to do with kids as the measuring is so simple.

What an ingenious idea to use the yogurt carton as the measure. This recipe is so unusual. I usually eat natural yogurt with muesli and I like it with prunes too! x

Just realised this is a good recipe to use when you have people coming over and nothing to offer, can be thrown together quickly!
